Serves 3-4
2 x large chicken breasts, cut into chunks
2 x carrots, peeled and sliced
2 x parsnips, peeled and cut into chunks
5 x small potatoes, peeled and cubed
1 x onion, chopped
lots of homemade chicken stock
250ml white wine
pepper
Lakeland Herb Sea Salt
couple of tbsp chicken gravy granules
couple of tbsp pearl barley
Fry the chicken breasts in a frying pan with a bit of oil for about 5-8 mins. Put all the other ingredients, apart from the pearl barley, into the slow cooker. Add the chicken once it's browned and cook on high for 4 hours. Add the pearl barley and cook for another hour.
Serve with crusty bread.
I had this for tea tonight and it was so nice, I always make my own chicken stock and it really does make all the difference to the taste.
