Chicken & Prawn Paella with Golden Vegetable Rice

Serves 4

1 onion, peeled and sliced
2 cloves garlic, peeled and minced
1tbsp sunflower oil
300g chicken fillets, diced
1/2tsp turmeric
500g Uncle Ben's express golden vegetable rice
300ml chicken stock
150g tiger prawns
chopped coriander, to garnish

Fry the onion and garlic in the oil for 1-2 mins.  Add the chicken and turmeric, then cook for a further 2 mins, making sure that the chicken is browned.
Mix in the rice, then add the stock.  Stir well and bring to a gentle simmer, before covering and cooking for a further 3 mins.
Add the prawns, cover again and continue to cook for another 2 mins.
Sprinkle with coriander and serve.
