Stuffed Chicken Breast wrapped in Parma Ham with Cubed Potatoes

This simple recipe is one we eat really regularly as it's so easy and soooo tasty.

Serves 2

2 x Chicken Breasts
2 x tbsp Garlic & Herb Philadelphia
6 x slices Parma Ham
Olive Oil
Potatoes
Garlic
Salt and Pepper

Make a slit in the chicken breasts and fill the hole with the Philadelphia.  Carefully lay out 3 x slices of parma ham on a flat surface, overlapping them slightly and carefully roll up and wrap the chicken breasts.  Place them in the oven at about 180 - 200 degrees for 20 - 25 minutes.
Meanwhile, peel the potatoes and chop them into small cubes.  Place them in a freezer bag along with some olive oil, seasoning and garlic and shake them up until they're all coated.  Put the potatoes on a lightly oiled baking tray and bake in the oven with the chicken.

Serve with your favourite veg.
