Quick Chilli Beef Noodles

Serves 4

350g rump steak, visible fat removed and cut into thin strips
1tsp garlic paste
2 large pinches dried chilli flakes
2tbsp groundnut oil
250g udon noodles
1tbsp toasted sesame oil
300g mixed stir fry vegetables
4tbsp teriyaki sauce
75g unsalted roasted peanuts, toasted
small bunch coriander, roughly chopped

Put the steam in a bowl, then add the garlic, chilli flakes and 1tbsp of the groundnut oil.  Mix and set aside for 5-10 mins.
Meanwhile, boil the noodles in water according to packet instructions, then drain and rinse under cold water.  Toss with the sesame oil.
Heat the remaining groundnut oil in a large wok.  When hot, add the marinated beef strips and stir fry for 1 min.  Add the mixed vegetables and stir fry for another 2-3 mins before adding the teriyaki sauce, noodles, peanuts and coriander.
Toss everything together for1-2 mins until well combined and heated through, then serve immediately.
