Wholesome Sweet & Sour Stuffed Peppers

Serves 4

1 large red pepper
1 large green pepper
1 large orange pepper
1 large yellow pepper
2tsp vegetable oil
325g mixed stir fry vegetables
500g jar Uncle Bens Original Sweet & Sour Sauce
2 x 250g pouches Uncle Ben's Express Egg Fried Rice

Preheat the oven to 200, gas mark 6.  Cut the peppers in 1/2 through their stalks. Carefully cut away the seeds and any white pith, but leave the stalk intact.
Place the peppers onto a baking sheet, cut side up.  Bake for 20 mins until softened.
10 mins before the end of the peppers cooking time, heat the oil in a large wok or frying pan and stir fry the vegetables for 3-4 mins.
Pour over the sweet & sour sauce and simmer for 2-3 mins until warmed through.  Meanwhile, cook the rice according to packet instructions and stir into the vegetable mixture.
Remove the peppers from the oven and immediately spoon the stir fry mixture unto the middle of each.  Serve immediately.
